Is there any way to allow a customer to donate money during the checkout process? Basically, letting them increase the amount of the sale by whatever number they add to a form field.

Currently there would not be a way to do this with out some sort of work around. The only thing that I can recommend is you would create a product called donations. This product can then have variants or personalizations for specific dollar amounts, etc. Then in checkout under pages >> predifined pages >> checkout - you could add a link that says if you would like to donate, please add this product to the cart, etc.

Otherwise there is not a way to do what you are looking for at this time frame.
