We have many customers putting requests in that aren't available after checkout.

First, go to OPERATIONS > SETTINGS > CHECKOUT Tab and Uncheck the the option for "Display customer notes during checkout" SAVE this and then go to OPERATIONS > CHECKOUT QUESTIONS. Define a new question called SHIPPING INSTRUCTIONS and change the option to TEXT - MULTIPLE. Click Create Question, for the label use something like "Please include any special shipping instructions." We use 10 Rows, 50 Characters per row, for a MAX LENGTH of 500 Characters. Click the ADD Answer button and then SAVE, this should be enough room for them to give you information. Let me know if this works for you.
